Orange Fennel Tahini Salad

About the Recipe

A fresh, fragrant citrus salads with a creamy tahini balsamic dressing - perfect for lunches throughout the week or impressing your friends at a dinner party. The feta adds a crumbly texture and the slivered almonds add a lovely crunch.

Ingredients

Salad Mixture

  • 1 head read leaf lettuce

  • 2 navel oranges (reserve 1 half orange for juice)

  • 1/2 fennel bulb

  • 5 sprigs of fennel fronds (the top green part of fennel)

  • 1/2 red onion

  • 10-15 leaves of mint or basil (either one works well)

  • 1/3 cup slivered almonds

  • 1 cup feta, crumbled by hand


Tahini Balsamic Dressing

  • 1/3 cup tahini

  • 3 tbsp balsamic vinegar

  • 1 tbsp honey

  • 3 cloves crushed garlic

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/4 tsp Dijon mustard

  • 1/2 navel orange worth of juice, freshy squeezed

Preparation

  1. Wash the red leaf lettuce by separating the leaves, rinsing and spin dry in salad spinner. Cut the lettuce into bite sized pieces and transfer to a large salad bowl.

  2. Wash and cut 1/2 a bulb's worth of fennel. Begin by separating each layer of the fennel bulb and cutting into long, thin strips. Sprinkle fennel slices on top of lettuce bed.

  3. With the remaining fennel fronds (the green tops), reserve 5 sprigs and chop the fronds. Sprinkle these on top of the lettuce mixture for added flavour.

  4. Wash and cut 2 navel oranges. Cut the oranges in half and reserve one half for the dressing (see below). With the remaining 3/4 of the oranges, remove the rind and cut into half wheels. Arrange on top of lettuce bed.

  5. Finely slice 1/2 a red onion and sprinkle the onion slivers on top of the salad.

  6. Wash and chop basil or mint - the amount suggested in the recipe is just that, a suggestion. Feel free to add more or cut back to your taste! Both basil and mint work well in this salad. Sprinkle the basil or mint on top of the salad.

  7. Crumble 1 cup of feta by hand by compressing a block of fresh feta in brine into small pieces with your fingers. You may also use a fork to crumble the feta in a separate bowl and sprinkle on top of salad.

  8. Sprinkle slivered almonds on top of the salad for an added crunch.

  9. For the Dressing: add all listed ingredients into a jar and shake vigorously until well incorporated and creamy. You can also add all listed ingredients to a bowl and whisk until well incorporated and creamy.

  10. Pour the dressing on top, toss and enjoy!
