Greek Christmas Cookie (Melomakarona) Granola

Makes 5 cups worth of granola - perfect for sprinkling on yogurt or used as a topping!

About the Recipe

Ingredients

  • 4 cups large flake rolled oats

  • 1 1/2 cups crushed walnuts

  • 1/2 tsp sea salt

  • 1/4 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1/2 tsp orange zest

  • 3/4 tsp vanilla extract

  • 1/2 cup olive oil

  • 1/6 cup + 1 tbsp honey




Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. Crush walnuts (or purchase pre-crushed/ chopped) and add to large mixing bowl

  3. Add oats to walnuts in mixing bowl along with sea salt, cinnamon, clove - mix dry ingredients

  4. In a separate bowl, mix olive oil, honey, vanilla extract and orange zest

  5. Pour oil and honey mixture over the oats and mix until oats are evenly covered and the ingredients are all well incorporated

  6. Prepare a large baking sheet lined with parchment paper

  7. Pour oat mixture on top of baking sheet spreading a relatively thin, even layer on the sheet

  8. Place in oven for 13 minutes at 350 degrees Fahrenheit. At the 13 minute mark, remove from oven and mix granola mixture to ensure even baking

  9. Place back in oven for 13 minutes

  10. Remove from oven and allow to cool fully - this ensures a crispy finish

  11. Once cooled, store in an airtight container and enjoy!


Great to sprinkle on yogurt, add to cereals or enjoy by the handful :)
